This recipe is PACKED with so many great-tasting ingredients that you may possibly say that it is one of THE BEST dishes you have ever had! My hubby will tell you that is what I always say when I taste something great – “This is the best (fill in the blank) I’ve ever had!!!” Well, this I DO know, it is my daughter, Kallie’s favorite recipe!

What is tortellini? If you google “Tortellini” it will say this:

tor•tel•li•ni
/ˌtôrtlˈēnē/
noun: tortellini; plural noun: tortellinis
1. small squares of pasta that are stuffed with meat or cheese and then rolled and formed into small rings.

I use packaged tortellini stuffed with cheese and spinach:

Here are the ingredients:

8 oz. Frozen chopped spinach
4T Butter, divided
3 T Flour
1 ¾ C Milk
¼ C grated Parmesan Cheese
1 C Cream
2 C cooked Chicken or Turkey, cubed
1 tsp. Salt
½ tsp. Pepper

Topping:
1 stick Butter, melted
1 sleeve Ritz Crackers, crushed

Preheat oven to 350F.
Cook spinach according to package directions. Drain well.
Cook Tortellini as directed, drain
Cook chicken, cube

Prep sauce mixture: In a medium saucepan, melt 2 tablespoons of butter, stir in flour, salt and pepper. Gradually add milk. Cook, stirring constantly until mixture comes to a boil and thickens. Reduce heat and add cheese and cream stirring over low heat until cheese melts.

Mix in cubed chicken, tortellini and spinach.
Pour into dish.
Top with cracker topping.
Bake for 15 minutes

YIELD: 6-8 servings

Get ready for YUMMY!

Now, you will also want to remember this recipe the day after Thanksgiving. Simply substitute the chicken with the turkey. I hope you enjoy this recipe.
